薬剤を使わず微生物の力で分解が進む、臭いのない床の上で自由に歩き回ったり、砂浴びをしたり、止まり木に止まったりと元気に過ごした親鶏です。
親鶏の身を２〜３時間ほど煮るとあっさりとした旨みのある鶏ガラスープがとれます。

出汁をとった親鶏の肉は食肉用に育てられた若鶏より長生きしているため、少し硬めではありますが、歯応えと旨みがあります。
そのまま鶏ガラスープの具として入れたり、サラダとしても楽しめます。
